Stout Griottes en fût de Pinot Noir

Nez léger de café moka où transcende les fruits. Un agréable mélange de la griotte y ayant macérée et du Pinot Noir imprégné dans le bois. En bouche, des pointes d’amertumes de torréfaction auxquelles viennent accompagner le fruit, la vanille et des pointes de bois humides.

Surette aux griottes

La Kriek est une bière traditionnelle belge faite avec des griottes, petites cerises surettes, dans un lambic, bière de fermentation spontanée. Nous inspirant de cette tradition, nous avons aussi utilisé des griottes avec une base de bière sure pour concocter notre Crique de la Brasserie, traduction libre et locale du Brewery Creek qui longe les BDT. Cette rousse aux reflets orangés et rosés exhale des parfums discrets de petits fruits dans lequel on discerne les arômes du blé. L’équilibre subtil entre ses notes surettes et fruitées est présent en tout temps. Les cerises Bing, Griottes ou Noires servent de trame de fond dans cette bière sans prétention et conviviale à souhait.

Nez de malt caramel et grillés avec une amertume modéré mais bien présente. Douce, caramel, mais réconfortante et ronde.

First beer brewed at BDT, a popular favourite. With aromas of pear, honey and grain. This fresh thirst-quencher combines notes of grain, freshly cut hay, slightly honeyed, with a light hoppy bitterness. The layering is long: persistent hops, firmly grounded in a nest of caramel.

Known as the beer of the first colonists of New France, this “Bouillon” evokes images of the Chaudière Falls that Samuel de Champlain described as a bubbling saucepan. Aromas of banana brighten up this german inspired beer. Wheat is at the forefront in this light and fruity weizen. Its mouthfeel gives the impression, although subtle, of ginger. Extra special bitter

In tribute to Philemon Wright’s original brewery, which gave the nearby creek its name, BDT offers a bitter in the pure english tradition. In this typical, seamless meeting of english malts, the hops’ herbal, floral side is intoxicating. Its long mouthfeel begs another taste.

Nut brown ale

We brew this beer in tribute to the allumettières (match makers) of the last century in Hull. This sultry brown ale will take you in with aromas of hazelnut and caramel. Its full mouthfeel flounces off with a mischievous, tart glance, leaving behind a sweet, teasing memory of caramel and grain.

Stout

Dark as night and crowned with a lasting head, this stout unleashes aromas of coffee, mocha and dark chocolate. Its silky mouthfeel is followed by roasted malt and fresh hops that meld into a long, hoppy finish.

Au pied du courant

American ipa

Its name evokes bitter memories of the patriots’ prison. Fresh hoppy flavours and lemon, pepper and evergreen notes escape from its creamy head. Smooth, soft caramel mouthfuls make it seem well behaved, until a bitterness sneaks in, and invades the palate.

New world triple

Soft aromas of tropical fruit tickle your nose. The first sip offers a silky, smooth mouthfeel. Its fruity flavour evokes candied orange. A wave of bitterness follows and fills the mouth with a burst of citrus and comforting hint s of alcohol.

Rauchbier

The great fire of 1900 left an indelible mark on Hull’s downtown landscape. The “turn of the cindery,” as this rauchbier might be called, with its subtle aroma of smoked deli meats, is inspired by the traditional Bamberg rauchbier. A whiff of beech wood delicately makes room for a honeyed fullness, yet is maintained by a fickle effervescence. The clean taste leaves behind barely a trace of smoke, like a memory a hundred years gone.

Belgian-style Ipa with cranberries

Beer brewed to commemorate the 400th anniversary
of the passage of Champlain in the Outaouais. Using cranberries, an indigenous fruit of the Gatineau. A nose of lemon, herbs and cranberry. Mouthfeel, fruity citrussy hops blend with the cranberries and the yeast in a refreshing half-acid, half-bitter taste at the finish.

Dumduminator

Doppleweizenbock

Dumduminator is a dream come true for our Master brewer. Dominique gosselin (Dumdum to his friends) baptized it by subtly adding the suffix –ator to its name. An explosion of banana is amplified by notes of spices and alcohol as it escapes from the glass. On the palate, caramel, alcohol and fruit flavours (banana) blend together in perfect harmony. The Dumduminator is brewed in the image of its creator: commanding and very likeable!

Trois portages

Triple

This beer’s name is in reference to the three portages taken by Champlain at the foot of the Chaudière Falls. A pale, luminous straw-coloured beer with fruity accents of peach, pineapple and orange. The peppery orange taste dominates the taste buds, reminiscent of Cointreau, until the sweetness gives way to tart notes of orange rind. Bitter is bound to sweet in a lingering finish.

For the hops aficionado in you! With a solid 70 ibu, this beer bursts with citrus, cherry, rosewater and woody notes that come from its columbus and amarillo hops. Sweet notes end in a union of alcohol, citrus and honey with a lasting bittersweet taste that keeps you wanting more.

Dunkel weizen

This dark wheat beer was kegged on the 20th anniversary of the fall of the Berlin wall. Slightly cloudy, it’s a close relative of our Bouillon de la Chaudière. Its name litterally
Means “broken wall” and commemorates the end
Of a dark period in german history. Aromas of almonds and banana bread, and a fruity mouthfeel pungent with peach and banana are enhanced by acidic tones and wafts of alcohol, and end on a sweet, soft, warm note.

Belgian white

Beer brewed in honour of the brewmaster’s daughter. It’s a blonde beer with a slightly greenish hue. Its soothing aromas of lavender and chamomile and refreshing flavours of wheat, herbs and orange has us dreaming of a good night’s rest…which no longer exists!

Indiana Québelge

Quadruple with carob and maple syrup

Indiana Québelge Collaboration with Art Cervesers, Spain. The Catalan brewery Art Cervesers has an awesome IPA named Indiana, which they brew using carob beans. We toyed with their recipe somewhat, recreating it with the same grain and hops bill (Fuggles and Cascade), but added a serious kick with local maple sugar. To quadruple the pleasure, we gave it a Belgian personality by using Belgian yeast, and now it sits comfortably in the Quad category. The scent of burnt maple syrup, cocoa, and alcohol will have you thinking of cognac. Beginning with a warm and round mouthfeel, it is sweet and comforting and beautifully balanced by its bitterness which – just like sticky maple – clings to the alcohol. The maple sugar finale melts into a relatively dry and evanescent aftertaste.

On the nose, we smell freshly cut cereal and frank notes of spicy hops. A refreshing summer beer in which the sweet and round malt gives way to a green bitterness.

Topped with a creamy head, this beer stakes its claim with alluring nutmeg and cinnamon. Honey and caramel share the stage before giving way to pumpkin and spices, especially nutmeg. Just like mom’s pumpkin pie!

Sweet vanilla and citrus flavours seduce the nose. Gentle at first sip, it blossoms into pear, lemon and mild pepper, and leaves the typical signature of belgian yeast. Seize the beer!

Appearances can be deceiving! Dark as ebony, La Belle Empoisonneuse first seduces with its sweet aromas of cocoa, cinnamon and ginger. Then, like an insidious poison, it creeps up and leaves you with a spicy bite banishing its first caress and extending its clutch in a powerful and lustful dissent.

Brett de Hull Sylvan Blend

Sylvan blend with brett, aged in Cabernet sauvignon barrels

Its delicately spiced aromas, from which thyme and tarragon emanate, harmonize with aromas of red wine and ripe cherries. In the mouth, the sweetnedd of the fruit adheres to the woody. What’s more, a fin acidity adds complexity while maintaining balance. The cherry (Lady Bing) and spices remain present without being too intense.

Triple aged with brettanomyces

Triple, aged 10 months in a Cabernet Sauvignon barrel, with Brettanomyces Bruxellensis. Concord grapes on the nose; currant on the mouthfeel. Notes of wood and orange tickle the palate. Winey, warmly alcoholic, its smooth and supple texture is like being wrapped in velvet.

Scotch ale

Its melodious name evokes a typical scottish pub,where kilt-wearing musicians proudly raise a glass in salute to the 100th BDT brew. Mahoganycoloured, with a persistent coffee-hued head, its sweet malt and caramel notes rise over a background of grilled hazelnuts, and a subtle melody of peat. A full, sweet caramelized flavour is accented with berry and a toasted, honeyed finish, and the warmth of alcohol vanquishes the last chill of winter and greets the approaching spring.

Ipa de la côte ouest... du Québec

Cette bière scintillante comble le nez de ses frais arômes de pamplemousse et de mandarine. Une franche amertume rafraîchissante persiste jusqu’à ce que l’ombre du caramel s’efface afin de laisser la lumière du houblon ensoleiller la finale florale.

Framboyante

Rasberry American Pale Ale

A reddish, almost purple-tinged raspberry beer with bewitching wildberry and raspberry flavours. The fruitiness is undeniable, as if crunching berry seeds, and segues into a mild but persistent tannic finish. La Framboyante won La Grande Brasse at the Bières et Saveurs de Chambly Festival in 2013.

Bière de Noël, style quadruple à la belge épicé.

Désormais une tradition du temps des fêtes, la messe de minuit se rapproche d’un gâteau au pain d’épices liquide. Ses sept épices se marient à l’alcool et au sucre pour réchauffer et égayer les cœurs dans cette période festive. Les flaveurs intenses d’anis, d’orange et raisin explosent dans un débordement presque excessif!

At first, you’ll enjoy a scent of wood and burnt caramel, which are soon joind by hints of brown sugar and candied fruits (dates or figs). Full-bodied and quite woodsy, this beer highlights tannins where alcohol mingles with caramel and hazelnut.

Imperial Stout with Morello cherries, aged for 10 months

Behold our Imperial stour aged in a brandy barrel, with a second maceration form Morello cherries previously blended with a sour beer. From its profound and quiet aroma arise scents of coffee, wet wood and a hint of berries. Slightly acidic cherry meets roasted coffee, thus sculpting the beer by giving it a silky and well-defined profile on the palate. Fairly dry finish.

Bière de pommes

Y a de quoi tomber dedans! Riche couleur caramel. Son nez évoque les pommes rouges et bien mûres. Les notes acidulées de pommes se marient tout en douceur avec le malt caramel. On ressent, en post-goût, une impression de cidre, vite rattrapée par un reflux de céréales. Le goût varie en fonction de la variété de pomme utilisée dans le brassin.

Saison à la belge

Quoi de mieux qu’une bière de saison pour apprécier l’été… et vice-versa ! La Saison Haute est une bière aux reflets orangés qui offre un bouquet frais de fleurs, d’orange et de citron. Elle présente des accents de poivre et de genévrier qui traversent une acidité finement ressentie. En bouche, l’explosion d’agrumes épouse parfaitement l’acidité désaltérante des céréales fraîches. Elle sent et goûte l’été, surtout sur la terrasse!
