Mille neuf cendre

Created in : February 2010
Beer type : Rauchbier
Colour : blonde
Alcohol : 5,5% alc./vol.

The Great Fire of 1900 left an indelible mark on Hull’s downtown landscape. The “Turn of the Cindery,” as this rauchbier might be called, with its subtle aroma of smoked deli meats, is inspired by the traditional Bamberg Rauchbier. A whiff of beech wood delicately makes room for a honeyed fullness, yet is maintained by a fickle effervescence. The clean taste leaves behind barely a trace of smoke, like a memory a hundred years gone.

Dumduminator

Created in : February 2010
Beer type : Doppelweizenbock
Colour : red
Alcohol : 8% alc./vol.

DumDuminator is a dream become beer for our brewer. Dominique Gosselin (DumDum to his friends) baptized it by subtly adding the suffix –ator to its name (an allusion to the ending of the names of several superheroes or characters from films known for their strength and/or their imposing presence (Wikipedia). This brick coloured beer, hazy yet radiant, is topped by a cream infused head. An explosion of banana is amplified by notes of spices and alcohol as it escapes from the glass. The energetic brewer’s yeast does an awesome job of transforming the sugars while leaving a very present trace. On the palate, caramel, alcohol and fruit flavours (banana) blend together in perfect harmony. The DumDuminator is brewed in the image of its creator: commanding and very appealing!

Obwandiyag

Created in : August 2010
Beer type : Harvest Ale
Colour : blonde
Alcohol : 6% alc./vol.

This hard to pronounce name belongs to Chief Pontiac of the Outaouais Tribe (1720-1769). We have attributed it to this aboriginal beer made with fresh hops from Pontiac. It is there in fact that the CREDETAO (Centre for Research and Development of Agricultural Technology of the Outaouais) has chosen to cultivate home grown hops from Quebec that Brasseurs du Temps use in this fresh and distinguished beer. Its floral scent, with whiffs of wheat, apricot and chlorophyll, gently flirts with the soft aroma of honey. A subtle bitterness slowly develops on the palate and sticks to the malt flavor before detaching itself in a spirited finale.
